How to slim down in a healthy way?

What diet helps you slim down in a way that you can see results but as soon as you start eating normally again all the fat won’t be put on again? So apart from exercising how much fruit/veg, water and fatty foods should I have in a day so that I start to see a difference quickly?
And I know smaller meals are better but what sort of size is that? 🙂

    I just started one a week ago where every thing I eat is High in fiber and I cut out all diet sodas and switch to water only i have lost 7 pounds in 7 days!
