    Garlic Feta Dip

    For serious garlic lovers! Start with 2 cloves garlic in this creamy, tangy dip and add more if you can handle it. Totally addictive. Serve with toasted Greek pita and raw vegetables.

    INGREDIENTS
    1 cup crumbled feta cheese
    1/2 cup sour cream
    1/2 cup plain yogurt
    2 cloves garlic, peeled
    1/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper

    DIRECTIONS
    Combine the feta cheese, sour cream, yogurt and garlic in the container of a food processor or blender. Pulse briefly until garlic is minced. Spoon into a serving dish, and season with salt and pepper.

    Citrus Infused Guacamole

    This recipe adds the flavors of orange, lime, and pineapple to the traditional guacamole. Combined with fresh cilantro, salt, and a hint of cumin, this is a dip you won’t forget! Great with tortilla chips, pita bread, or add to your favorite veggie wrap!

    INGREDIENTS
    2 avocados – peeled, pitted, and mashed
    1/2 tablespoon lime juice
    1/2 tablespoon orange juice
    1/2 tablespoon pineapple juice
    1/4 teaspoon ground cumin
    1/4 cup coarsely chopped cilantro
    salt to taste
    1 teaspoon hot pepper sauce, or to taste (optional)

    DIRECTIONS
    In a large bowl, stir together the avocados, lime juice, orange juice, pineapple juice, cumin, cilantro and salt. Mix in hot pepper sauce if using. Serve immediately, or refrigerate until serving. Place one of the avocado pits into the bowl to help keep it fresh.

    BBQ Pork for Sandwiches

    This is so easy and very tasty. Serve on buns with French fries or potato chips.

    INGREDIENTS
    1 (14 ounce) can beef broth
    3 pounds boneless pork ribs
    1 (18 ounce) bottle barbeque sauce

    DIRECTIONS

    Pour can of beef broth into slow cooker, and add boneless pork ribs. Cook on High heat for 4 hours, or until meat shreds easily. Remove meat, and shred with two forks. It will seem that it’s not working right away, but it will.

    Preheat oven to 350 degrees F (175 degrees C). Transfer the shredded pork to a Dutch oven or iron skillet, and stir in barbeque sauce.

    Bake in the preheated oven for 30 minutes, or until heated through.

    Filet Mignon Steeped in an Amber Rum Glaze

    Filet Mignon, marinated with rum, soy sauce, garlic and shallots, and broiled until medium rare.

    Ingredients:

    * Four 1 1/2 inch thick filet mignons
    * 2/3 cup 80 proof amber rum
    * 2/3 cup soy sauce
    * 1 clove garlic, minced
    * 1 small shallot, minced
    * 1 1/2 teaspoons dried hot red pepper
    * 2 Tbsp vegetable oil

    Method

    In shallow dish mix together rum, soy sauce, garlic, shallot and red pepper. Add four 1 1/2 inch thick filet mignons. Cover and refrigerate two hours, turning occasionally. Remove steaks from marinade and brush lightly with oil. Broil in preheated broiler, 6 inches from heat for 1 minute each side. Turn and broil until medium rare. Arrange filets on serving platter and garnish with watercress, sliced radishes and cucumber spears.

    Notes: This recipe is worthy fare and serves beautifully at dinner parties also okay? 🙂
