Can anyone suggest any tasty but healthy, low fat recipies or methods of cooking rice?

I’m trying to avoid fried rice, even though it’s deliciously tasty.
I’m looking for ideas that include low fat healthy ingredients, but which are packed with interesting flavours and textures.

    You can substitute chicken, beef or vegetable broth for the cooking water;add some frozen mixed veggies, sauteed veggies such as onions and mushrooms or chopped fresh veggies such as carrots, celery, zuchini or squash; or add some left over chicken, beef or pork to you rice all without frying it. Very tasty, healthy and low fat.

    fry 1 onion in a little olive oil then add small can of tomato puree and keep fryiny for 2 minutes stirring all the time then take off the heat add two beef stock cubes and one red chilli add enough water for rice to cook oh and add the rice bring to the boil then simmer until rice is tender enjoy

    Edamame Rice

    This is a light and refreshing way to jazz up a side dish of rice. Cooking it in the microwave saves time.
    INGREDIENTS:
    1 cup uncooked jasmine rice
    2 cups water
    1 cup frozen edamame
    2 tbsp fresh lemon juice
    2 tbsp freshly chopped mint
    PREPARATION:
    Place rice and water in a microwavable bowl. Microwave uncovered on high for 9 minutes. Remove from microwave oven and stir. Add edamame, lemon juice and mint. Cover and return to microwave. Microwave on high for 5 minutes.

    Allow to stand for 1 minute. Makes 3 cups.
    Serves 6

    Bring pan of water to boiling point

    add salt

    add cheapest plain rice you can find

    stir – bring back to the boil – stir – switch off heat

    Leave for 20 mins. DO NOT REMOVE LID

    DONE.

    I always use a little chicken bouillon and fresh chopped garlic. Just put in those ingredients with some salt and pepper and cook like normal rice. 1 cup rice, 2 cups water(with chicken bouillon, garlic, salt, and pepper)
    Bring rice and water to a boil then cover with lid and turn down heat. Simmer for 15 minutes or until all water is absorbed. This rice has a great flavor and is low fat. Enjoy!
