What meals are cheap and easy to make and fairly healthy?

I have just moved into my own flat, i’m used to my mother making all my meals! Seem to be spemding a small fortune on take aways and microwave dinners which are obviously not very healthy! Help!

    i like to fry the cheapes maple bacon then cook potato in the leavins. also fry egg scramble and english muffin fo samwich.

    I like to make quesedillas with wheat tortilla shells, lowfat or fat free cheese and veggies or grilled chicken. Very easy to prepare.

    Spag Bol and Chilli are cjeap to make. Thay can also be made in big portions so I tend to freeze them so I can just them out freezer when I need them

    How about pasta in sauce either brought or home made, Baked potato’s with beans, or tuna and sweetcorn [instead of the beans] and a side salad, Mashed potato’s and sausage are another cheap meal to do.

    Wild rice, 1 can Campbell’s cream of chicken soup, 1 can chicken, 1 can whole kernel corn (not creamed corn). Heat and mix up together in a bowl. Dash with pepper (optional). One of my favorite all-time recipes. Easy to make, nutritious and very tasty. Great for a cold day.

    Pauper’s Beef Stroganoff

    Ingredients:
    1 lb. stew beef
    1/2 c. flour
    1 Tbsp. paprika
    2 Tbsp. vegetable oil
    1 small onion, sliced (optional)
    1 c. milk
    1 c. beef broth (or 1 c. prepared beef boullion)
    1 small can sliced mushrooms, drained (optional)
    2 Tbsp. vinegar
    Salt and pepper to taste
    Directions:
    Cut stew beef into bite-sized pieces.

    In a medium bowl, combine flour and paprika. Toss beef in flour.

    In an electric skillet, heat oil. Add onion (if you’re using it – my kids aren’t fans) and saute until softened. Add beef to skillet. Brown beef.

    When beef is browned on all sides (no more red peeking through the flour coating), Slowly stir in the beef broth. (If you don’t have a can of beef broth in your larder, make a cup of beef boullion.) Stir in milk. Simmer. Add mushrooms here if you choose.

    Allow to simmer for ten minutes, or until sauce is thickened. Add vinegar, and salt and pepper to taste. (Authentic stroganoff would have you remove the dish from the heat and stir in a whole heap of sour cream, so that’s the idea – a little creaminess, a little hint of tartness.)

    Serve over noodles. Or with rice or potatoes.

    Easy Weeknight Meatball Hash
    Ingredients:
    1 lb. ground beef
    1/2 c. – 3/4 c. bread crumbs
    2 eggs
    1/4 c. plus 1/2 c. milk
    2 Tbsp. olive oil
    2 – 3 c. potatoes
    1 14oz. can beef broth
    1/4 c. flour
    Directions:
    This is an easy weeknight on-a-shoestring meal that comes together fast with a minimum of dishes! Devised during The Christmas Without a Kitchen.

    Defrost the ground beef in the microwave, if necessary.

    When defrosted, place beef into a medium sized bowl. Add bread crumbs, eggs, and 1/4 c. milk. Take off your rings and combine the mixture with your hands. (It really skeeves me when my rings get gunky.) Once all the bread crumbs are worked in, start making small meatballs: think ping-pong balls or smaller.

    Place the meatballs into an electric skillet. Spray it with nonstick if it needs it. Turn the skillet to medium to medium high heat to brown the meatballs. Use a spatula to turn them to brown evenly, or just lift up the skillet pan and shake it to roll them around a bit.

    While the meatballs are browning, cut the potatoes into bite-sized pieces. If you’re pressed for time, use new potatoes so you don’t have to spend time peeling. If you’ve got baking potatoes, peel them before cutting them.

    Add the potatoes to the pan with the olive oil.

    When the meatballs are browned and the potatoes a little bit browned, shake the flour over the skillet. Stir to coat the meatballs and potatoes with flour. When there are no more lumps of flour, add the broth.

    Cover the skillet and simmer 10 min. Add 1/2 c. milk and stir in. The broth should have formed a gravy. Cover and continue to cook if the potatoes are not yet fork tender. (How soon this will be done depends on how small you cut the potatoes; little bites cook faster, of course.)
    Serve with a vegetable and dinner’s done!

    Individual Tortilla Pizzas
    Ingredients
    2 small flour tortillas
    2 ladlefuls of tomato sauce
    2 handfuls of mozzarella cheese
    Italian seasoning to taste
    Toppings to taste: chopped up pepperoni, bacon and pineapple, cooked hanburger, whatever you want
    Directions:
    Preheat oven to 400 degrees. Place tortillas on an ungreased cookie sheet. Spread a ladleful of sauce onto each tortilla in a circular motion up to the edge of the tortilla (leave about 1/8 inch “crust”). Sprinkle a handful of mozzarella onto each tortilla, then season/top as you like. Bake in a 400 degree oven for six minutes, watching carefully so that the pizza cheese doesn’t burn. When done, remove from the oven and cut each pizza into quarters with pizza cutter

    stews are great because they last ages and can use them for loadsa diff foods, pies etc x

    Chicken Stir-Fried Ramen
    Ingredients
    1 (3-ounce) package chicken flavor ramen soup mix
    1/2 cup chopped onion
    1/4 cup sliced hearts of palm
    1-1/2 tablespoons olive oil
    1 can cooked chunk chicken, drained
    1/4 cup frozen baby sweet peas or mixed vegetables (you may also used canned)
    Parmesan cheese
    Chopped parsley for garnish

    Instructions
    Cook the ramen noodles separately according to package directions, reserving the flavoring packet for use below. Drain and keep warm. If you use frozen peas or vegetables, you can cook them in with the noodles.

    While cooking the noodles, saute the onion and hearts of palm in a large frying pan until onion is soft. Add drained, chunked chicken and heat until warmed through, taking care not to shred the chicken chunks. Stir in the contents of the ramen soup flavoring packet, and combine until mixed. Add the cooked, drained ramen noodles and peas. Toss until coated. Turn onto plates and top with grated Parmesan cheese and parsley.

    Yield: 2 servings

    Note: Recipe can easily be doubled or tripled. Feel free to substitute different flavors of ramen soup mix and corresponding seafood (tuna and shrimp are good) or cooked meat.

    chicken curry is great.here’s the ingredients to serve 4
    2 cloves garlic, 2 teaspoons cumin seeds, 1 teaspoon turmeric, 1 teaspoon chili powder, 1 teaspoon pepper, 2 onions and 500g natural yoghurt.
    mix it all together with the chicken and leave to marinate. just cook in some hot oil and serve with rice

    Vegetables and fruits are quite expensive if you buy them fresh. You can get frozen vegetables and make a stir fry (fry them with noodles, chicken and soy sauce for example). It’s easy and healthy!
    You can also try a vegetable omelette: break and beat 1 or 2 eggs, cut some red pepper in, add some peas, tomatoes and fry the whole. when it’s half done, put it in the oven to cook the top. you can also add cheese.
    It’s also easy to add vegetables (from frozen mixed bags), in any pasta bake, in rice side dish!

    Spaghetti bolognese – Mix carrots, onion, mushrooms (any other veg hanging around and a tin tomatoes all finely ground in food proceessor with llb mince. Add a bit of garlic and plenty of mixed herbs and bring it to boil and cook for half hr. Boil spaghetti top with bolognese – top with grated cheese. serve with salad or peas.
    Tuna pasta bake. Stir fry chopped onion, green pepper and sweetcorn. add flaked tin tuna. Add cooked pasta. Add small tub plain yoghurt (cream is more fattening) heat thu and serve.

    pasta with make your own tomato sauce and Tuna.

    serves 3-4, or u can save it and have for lunch nxt day or two.

    1x tin toms (either pre chopped or chop them yourself) about
    1x tin Tesco value Tuna about
    1x cougettes
    1x pepper (pick ur own colour)
    2-3 tbl spn of tomatoe puree
    2x tbl spoon of Oregano or basil (tesco own brand is about 70p a bottle)
    2x cloves of garlic
    salt & black pepper

    1. turn on tomatoes, an boil water,
    2. meantime chop all your ingredients and add to the tomatoes as you go. Put pasta in.
    3. leave the lid off the tomatoes and stir constantly
    4. if tomatoe sauce is looking too thin add more puree, of it looks too thick add a little water.
    5. once pasta is done drain then add the tuna to the tomatoe’s, stir in.
    6. drain pasta and serve.

    Also make your own garlic bread, using uncut bread of just normal white bread (if your really on a budget).

    If you have a blender, chop up loads of garlic, mix with butter and a bit of parsley, blend or mix up with your hands.

    toast one side of bread under grill, then turn over add the butter and toast some more.

    Try this one. Linguine, tinned crab meat, tomatoes, garlic, olive oil, tarragon. Cook pasta then toss everything togeather. Very cheap and healthy. Dont forget salt & pepper, and maybe a chopped chilli.

    Buy Heads of iceberg lettuce (about a dollar a piece) Buy some bonelss skinless chicken.

    Sprinkle all purpose seasoning on the chicken (adobo cheap and taste amazing on poultry, fish and meat) Sautee the chicken in a little oil (veggie, canola, corn all work great, use about 1tbsps per pound of chicken.

    Tose the chicken with lettuce and a chopped tomato. Add dressing as desired.

    This is an amzing tasting, awesomely cheap easy meal to make and enjoy! Have it as often as you wish because it is very very healthy!

    Easy Crockpot Dinner

    4-6 chicken breasts
    2 cans creamed soups
    noodles or rice, cooked

    PREPARATION:
    To make a simple and fast meal in the slow cooker you can take chicken breasts and cover them with your favorite soup like mushroom, celery, cream of broccoli or combine two soups.(Cream of chicken and cream of celery are good together.) Slow cook for 8 hours on low.

    Serve over rice or noodles.

    Pasta, potatoes and rice are two essentials. I assume you eat meat so try to get fresh meat from your local butcher as this will be cheaper that than the pre-packed store bought variety. Also buy loads of fresh vegetables from your greengrocer or supermarket.

    Quick easy healthy recipe?
    Lightly fry your choice of meat (cut into strips) in a pan with some olive oil, garlic, ginger and a bit of chilli (if you so desire). When that is cooked, add some courgette, mange tout, carrots, or whatever other vegetables you like (as many types as you like). Fry for a few minutes until the veggies are cooked but still firm and serve with rice.

    Spag bol.
    1 onion-chopped.
    1lb of fresh mince.
    tin of chopped toms.
    1 pkt of spag bol mix.
    Tomato puree

    METHOD

    1, put a small ammount of oil in a frying pan. Add onions and cook until soft.
    2. Add the mince and cook until all the pink has gpne from the mince.
    3, Add chopped toms, spag bol mix and simmer for 15 mins.

    Whilst this is simmering, do the pasta.

    Put boiling water in the saucepan, add pasta and cook until soft. Drain off and serve.
    This freezes well and the sauce is nice with a jacket potatoe.
