Recipe for a low carb under 10gm chicken casserole?

I want to make a chicken casserole but i want it to be a very low carb dinner.

    Instead of pasta, throw the chicken in your casserole dish with a bag of specialty frozen veggie mix. You know what veggies your family and/or friends like best. Get a mix with those in it. You can get all sorts of special mixes nowadays in most grocery stores. When it’s nearly done, top with grated cheese.

    Cut the chicken into bite-sized pieces and brown in a skillet that’s been sprayed with non-stick spray. Season to taste. I like a combination of salt, pepper, onion, and garlic. You can add a little water while it’s cooking if it starts to stick. Be sure the chicken is done, then mix it with the frozen veggies and pile it into your casserole pan. Bake at 350 degrees Fahrenheit about 30 min, then top with grated cheese and bake 10-15 min more. Yummers!

    CHICKEN WITH CUCUMBERS
    2 tbsp. olive oil
    1 tbsp butter
    chicken breasts
    1 large cucumber
    1/2 an onion, sliced thin
    1/2 tsp. ground cumin
    1/2 tsp. ground mustard
    2 cloves garlic, minced
    1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
    3 tbsp. sour cream

    Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.

    Serve with a side of mixed stir-fry veggies. it’s great!

    Very easy. Serve with a tossed salad on the side and you have a nice meal that’s very low in carbs.

    Makes 3 servings
    Without cheese: Per Serving: 144 Calories; 2g Fat; 28g Protein; 3g Carbohydrate; trace Dietary Fiber; 3g Net Carbs
    With Cheese: Per Serving: 249 Calories; 10g Fat; 34g Protein; 4g Carbohydrate; trace Dietary Fiber; 3.5g Net Carbs

    3 boneless skinless chicken breasts
    10 ounce can Ro-tel tomatoes, undrained
    3 slices Deluxe American cheese (optional)

    Put the chicken in an 8×8″ baking dish. Pour the tomatoes and liquid over the chicken and try to keep the bits of tomato on top of the chicken, not in the bottom of the pan. Bake at 350º about 30 minutes or until done to your liking. If desired, top each piece with cheese and return to the oven until cheese is melted.

    Do not freeze

    Here’s another good one from my files:

    Chicken Cordon Bleu
    Makes 4 servings

    4 boneless, skinless chicken breasts
    8 ham slices — thinly sliced
    4 Swiss cheese slices (1/2 oz. each)
    1 tablespoon butter, melted
    1 large egg — beaten
    3/4 cup parmesan cheese ( I use Kraft in the shaker for 0 carbs.)

    Pound chicken breasts to about 1/3″ thick. Place ham on breast then 1/2 oz of swiss cheese. Roll up; securing with a toothpick.

    Dip each breast-roll into a mixture of the melted butter and beaten egg. Roll in Parmesan cheese and place in buttered baking dish.

    Bake at 350ºF for about 40 minutes or until browned and tender.
